A Victorian Pancake Recipe

The art of making pancakes is not a modern invention. Here’s Mrs Crocombe’s Victorian recipe, straight from the kitchen at Audley End.

What you will need:


  • 3 tablespoons of flour
  • A quarter pint of milk
  • 3 eggs
  • Butter, for the pan


  • Sugar
  • Jam
  • Lemon, to flavour

Mrs Crocombe's Cookbook

Back in the 1880s, Mrs Avis Crocombe worked in the kitchens at Audley End and captured many different recipes in her cookery book; which we are lucky enough to still have today.   The cookbook includes a range of Victorian delights, from pancakes to gingerbread cake, there is even a recipe for roasted swan! Step into the past and discover recipes from Mrs Crocombe’s original cookbook here and even have a go at recreating a taste of Victorian England for yourself.

Take a look into the Kitchen at Audley End

When you walk into the large kitchen you are immediately greeted by the three original 18th century stone fireplaces. All types of flans, pies and biscuits were made here. You can also see the cook’s room, which served as an office and sitting room, where the cook would have prepared the menus and recipes.
